Fluffy 5-Ingredient Vegan Pancakes

These pancakes are my go-to for a fresh, hot, carb-y breakfast! Whether on a sleepy, Sunday morning, or even for pre-work breakfast, these pancakes come together quickly, with just a few ingredients you most likely already have in your pantry.

The baking powder gives these pancakes a huge lift – it’s super satisfying to watch them expand upwards when the batter hits the hot skillet. And depending on your dietary needs, you can use either a fruit puree like applesauce or regular vegetable oil in the batter as a binding agent.

What Else?

Make them EXTRA AF by adding in all kinds of optional morsels – personally, I love chia seeds and ground flax for extra hidden nutrients, but have made them mixed with blueberries, cherries, banana slices, chocolate chips, walnuts…you’re limited only by what you can find in your kitchen.

Whip up a steaming hot batch of fluffy, mile-high pancakes with ingredients you already have in your pantry! Extra baking powder gives these pancakes a light and airy structure, perfect for smothering in vegan butter and maple syrup.

Course: Breakfast
Servings: 8 5″ pancakes
Ingredients
  • 1 cup flour
  • 2 tbs baking powder
  • pinch of salt
  • 1 cup nondairy milk
  • 1 tbs agave or other liquid sweetener
  • 2 tbs applesauce or oil
Instructions
  1. In a medium-sized bowl, whisk together the flour, baking powder, and pinch of salt.

  2. In a small bowl or measuring cup, mix together the nondairy milk, agave, and applesauce/oil. 

  3. Pour the wet mixture into the dry mixture, whisking until blended. Don’t overmix, just until the dry clumps are gone. The finished mixture will be bubbly and thick, but pourable.

  4. On a pre-heated oiled or nonstick griddle or skillet at medium heat, pour batter. Flip when the top is covered in air bubbles. Finished when golden brown, about 1-2 minutes per side. 

  5. Serve hot, with butter, syrup, fresh fruit, jam, whatever you like!

Recipe Notes

Mix in almost anything to the batter to make delicious flavored pancakes! I love adding ground flax, walnuts, and chocolate chips for a super decadent breakfast.
