So instead of talking about myself today (least favorite thing to do), let’s get right to the food-making (most favorite thing to do).
This easy 8-ingredient vegan french toast recipe uses aquafaba, that miracle bean juice, for perfect binding power. It’s got turmeric, for some familiar color. It’s got nooch / nutritional yeast (HEYOOO) for that eggless eggy flavor.
It doesn’t reinvent the wheel. But it’s comforting and delicious and simple. And most importantly, it satisfies that breakfast food combo craving for crunchy, creamy, sweet, and savory deliciousness.
I don’t know about you, but chickpeas are on the menu ALL THE TIME in my house. This recipe is a great way to use that aquafaba you saved but had no idea what to do with!
Until this french toast recipe, there was usually always a jar in my fridge of aquafaba I’d saved to use for some time-consuming and labor intensive recipe I’d pinned on Pinterest (I swear I’ll get around to it someday!), which would be quickly forgotten, rediscovered weeks later, and promptly thrown out. And the cycle begins again. And again. Ad nauseam. No more!

quick and easy vegan french toast recipe which uses aquafaba as an egg-free substitute
- 1 loaf thick cut bread (about 12 slices)
- 2/3 - 3/4 cup aquafaba (whatever you get out of 1 can of chickpeas!)
- 1/2 cup nondairy milk
- 1 tbsp nutritional yeast
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- pinch nutmeg (optional)
- pinch turmeric (for color)
- oil, for pan

Strain 1 can of chickpeas, separating the beans from the aquafaba liquid. Store chickpeas for later.

In a medium sized bowl, whisk aquafaba until good and frothy, about 20 seconds.

Add nondairy milk, nutritional yeast, cinnamon, vanilla, nutmeg, and turmeric to aquafaba, mix together.

Heat a nonstick skillet to medium heat, lightly oil.

Dip bread slices one at a time into mixture, coating both sides fully. Once coated, place in preheated pan. Cook for about 3-4 minutes per side, until golden brown.

Serve immediately! Best with powdered sugar, maple syrup, and a side of fruit.
- Keep your french toast toasty while you finish cooking by popping the finished toast into the oven at 200° on a baking sheet.
- Re-oiling pan between batches is recommended to prevent sticking. Nonstick pan is recommended for the same reason!
